Chef Collin Brown’s humble beginnings started in Trelawny, Jamaica, where he was born and raised. As a child, he enjoyed cooking and officially started his career at the age of sixteen at La Roose Restaurant, Port Henderson, St Catherine (April 1990 to March 1993). At La Roose, Collin became immersed in cooking with an unparalleled appetite for learning, which soon established himself as a household name in the Port Henderson community. After his three years apprenticeship at La Roose, Collin set his sights for bigger and better and was rewarded with a position as Chef at Myrtles Restaurant, Grand Cayman (May 1994 to January 1996).
Following this successful experience, his aunt who is the Personal Chef of Harrison Ford, persuaded him to travel to the United Kingdom where his set up his catering company Ackee Ltd (February 1998 to October 2004) in the UK. Over the years Collin has created meals for an impressive list: P Diddy, Kelly Rowland, Prince Michael, The Rockefeller family, Angie Stone and Christina Milian to name a few. All these celebrity clients had one thing in common, simply the desire to experience the unrivalled taste of Jamaican food with exotic flavours and texture, created from the fusion of the passed down generations of recipes from the indigenous folks who have inhabited the islands since the 14th Century.
